Ingredients
1 cup of honey
1 tablespoon of freshly grated ginger
Powdered sugar for dusting
Steps
Combine the honey and ginger in a small pot.
Heat the mixture over medium heat until it reaches 300°F (150°C) on a candy thermometer. This is the "hard crack" stage in candy making.
Once the mixture reaches the right temperature, remove it from the heat and let it cool for a few minutes.
Drop small spoonfuls of the mixture onto powdered sugar-dusted parchment paper.
Let the drops harden completely. This may take a few hours.
Once hardened, dust the lozenges with more powdered sugar to prevent them from sticking together.
Store the lozenges in an airtight container.
